I don't know about you, but Dave and I love to eat ice cream every season... Since we were little, whether it was summer or winter, whether it was sunny or a universal flood, no one could stop us from going for ice cream with our nonni... It was a ritual that we loved very much and therefore we decided to continue to carry on this tradition between us.
Over the years and especially since I started eating without salt and sugar, it has been difficult to find good ice cream, so I started making it myself. Not long ago I lived in a small house, with a tiny kitchen, so there wasn't space to keep another appliance, so I ingeniously created a super quick and easy recipe that could be made almost on its own, without using of the ice cream maker and with only 4 ingredients.
Then when I met Dave he fell in love with it, and it became a "must have" in the freezer. Today we share it with you so that you too can fall in love with it. RECIPE IN A NUTSHELL:
DIFFICULTY: Easy
COUSINE: Italian
COURSE: Dessert
SERVINGS: 6 cups
PREPARATION TIME: 20 mins
REST TIME: 5 hours
DIRECTIONS
Let's take 3 bowls. In one we put the egg whites, in the second the egg yolks with fructose and in the third the heavy (or double) cream.
With the help of an hand mixer (or a stand mixer), beat the egg whites well until stiff peaks form. Then we move on to whipping the cream and finally beat the egg yolks with the fructose until they will be frothy and light yellow.
Now add the egg yolks whipped with fructose to the egg whites. With the help of a hand whisk we delicately incorporate everything, mixing delicately from bottom to top until we obtain a homogeneous colored mixture.
Now take the vanilla bean and cut it along the long side with a knife. Let's open it in two and with the back of the knife we scrape out the seeds and add them to the mixture obtained previously.
Add the whipped cream a little at a time and continue to mix gently from bottom to top until everything is well combined.
We put the mixture just obtained into a container, close the lid and place it in the freezer.
Leave it in the freezer for 5 hours and then our ice cream without an ice cream maker can be served and enjoyed.
A creamy, tasty, healthy and natural ice cream that will brighten up sunny afternoons and evenings with friends.
TIPS
The freezing time is based on the power of a normal freezer but may vary depending on the power of your freezer and the container you use. My freezer which is at -23°C (-9.4°F) usually takes 2.5/3 hours.
The first time you make it I recommend checking the consistency from time to time to prevent it from freezing and losing its creaminess.
